Breakfast. Such a luxury these days when I grab an egg and box of something as I’m rushing out of the door to catch a bus. By the time its Saturday, I’m ready for real breakfast. I’m ready for pancakes. I make the world’s easiest pancakes since I’m such a bad cook, but they taste like pancakes should.
I’d like to say that the granola adds texture and depth (which I’m sure it does) but its my way of making sure of a wholesome meal, since these are flourless ‘cakes. Which means you can leave them alone if you prefer. But why not have two breakfasts in one?
Makes around three pancakes:
- 1 large egg
- 1 ripe banana
- some oil
Yes thats it! Mash the banana, crack in the egg and mix with the oil. Spray some oil onto a small pan, then spoon about three dollops of batter into the center. Cook for a couple of minutes or till golden before flipping the pancake over and doing the same for the other side.
Serve with the granola, plain yoghurt, blueberries, honey (my personal favourites) or whatever you’d like.
